One favorite from me and one from the Prince Aiden.
1) Vegan Banana Peanut Butter Smoothie
1 frozen banana
1 cup almond milk (or milk of choice)
1/2 tsp pure vanilla extract
1 tsp Stevia ( or sweetener of choice)
2 TBS peanut butter (we like grinding our own peanut butter at the grocery store)
Add all ingredients to blender and blend. If you like it thinner, add a bit more milk.
Enjoy the yumminess!
2) Egg and Cheese Quesadilla
1 Brown Rice Tortillas (or tortilla of choice)
1 egg or 1/4 cup egg beaters/whites
1/4 rice cheese (or cheese of choice)
1 to 2 tsp butter or oil
1/4 tsp Italian seasoning
Place small amount (about 1 tsp) butter or oil in pan and scramble egg. Set aside.
Place 1 tsp butter or oil in large pan, when oil is hot, lay tortilla in pan and move around with your hand until the oil has touched the entire one-side of the tortilla.
Add egg to half of the tortilla.
Add Italian seasoning on top of egg.
Add cheese on top of Italian seasoning.
Fold tortilla in half and cook until brown.
Flip and do the same to the other side.
